Die Nährwerttabellen sind für die 7. Auflage gründlich überarbeitet worden und enthalten die neuesten Inhaltsstoffdaten von Nahrungsmitteln. Die Tabellen in englischer Sprache (mit deutscher und französischer Übersetzung) sind auf die Bedürfnisse der Diätetik und Ernährungsberatung abgestimmt. Sie bieten aber auch allen, die mit der Erzeugung, Vermarktung und Überwachung von Lebensmitteln oder sonstigen Fragen zur Ernährung befasst sind, schnelle und umfassende Information über die Zusammensetzung von Lebensmitteln. Neu aufgenommene Lebensmittel sind: * Getreide: Dinkel (ganzes Korn) und Dinkelmehl Type 630 * Fische: Dorade Royal und Buttermakrele * Fleisch: insgesamt 9 Lammfleischstücke (Nuss, Rücken, Kotelett, Oberschale, Unterschale, Schulter, Hüfte, Nacken, Brust) sowie Ziegenfleisch-Lende. Neue Inhaltsstoffe: Als neue Verbindungsklasse im Bereich der bioaktiven Stoffe sind die Glucosinolate hinzugefügt worden. Auch einige Fettsäuren wurden ergänzt. Weiterhin wurden überarbeitet und auf den neuesten Stand gebracht: * Getreide: Neue Aminosäuredaten von einigen Getreidekörnern und Getreideprodukten sowie Ergänzungen zu speziellen Kohlenhydraten (Stärke, Glucose, Saccharose, Maltose, Fructose, Raffinose) * Fisch: Aktualisierte Daten zu Iod, Vitamin K und Purinen * Gemüse: Einige Fettsäuredaten wurden ergänzt. * Fleisch: Aktualisierte Daten zu den Hauptbestandteilen zahlreicher Würste und Kalbfleischstücke sowie den Cholesterinwerten des Kalbfleisches * Milch und Milchprodukte: Erneuerte Aminosäuredaten und Fettsäuredaten und Vitamin K-Werte zu den gängigen Konsummilchsorten und umfassend aktualisierte bzw. ergänzte Cholesterinwerte und Orotsäurewerte für sämtliche Produkte * Zahlreiche aktualisierte Mineralstoffwerte In der Einleitung werden Historie und Struktur des SFK sowie Herkunft und Auswertung der Daten erläutert. The English-language tables (with German and French translations) were designed to meet the needs of dieticians and nutrition counsellors, but they provide quick, exhaustive information about the food composition for everyone involved in the production, marketing and monitoring of foods. Newly included foods: - Cereals: spelt (whole grain) and spelt flour (German type 630) - Fish: gilthead seabream and escolar - Meat: a total of 9 cuts of lamb (knuckle, loin, lamb chop, top round, silverside, shoulder, rump, neck, breast) and loin of goat. New constituents: The glucosinolates are now included in the group of bioactive substances, and several fatty acids have been added. The following tables have been revised and updated: - Cereals: new amino acid data from several grains and grain products and additional data on carbohydrates (starch, glucose, saccharose, maltose, fructose, raffinose) - Fish: updated figures for iodine, vitamin K and the purines - Vegetables: additional data on several fatty acids - Meat: updated information on major constituents of numerous sausage products and cuts of veal as well as cholesterol values for veal - Milk and milk products: revised amino acid and fatty acid data as well as vitamin K values for common consumer milk varieties; comprehensively updated and supplemented cholesterol and orotic acid values for all products in this food group - Numerous mineral values updated In the introduction the history and structure of the SFK tables are set down and the origin and evaluation of the data explained.
